Sustainability at the table
The VUB restaurant uses local ingredients, seasonal vegetables, fair-trade agricultural produce and sustainably certified fish to create varied and sustainable menus. In recent years, we’ve also increased the share of plant-based dishes. Vegan meals are becoming more and more popular, and every meal at our restaurant contains at least 200 grams of vegetables.
Less waste
We also help reduce waste by offering takeaway-drinks in a reusable Billie Cup only. This saves us 40,000 disposable cups every year! Moreover, the restaurant tries to limit food surpluses as much as possible. Any surpluses are biomethanised: leftovers are fermented and the methane gas that is produced is converted into heat and green electricity.
